Morning Fuel, Done Right

A good breakfast sets the tone for the entire day. These five recipes are easy to make at home, use simple ingredients, and prove that healthy mornings do not have to be boring.

1. Classic Granola Bowl

Combine 2 cups rolled oats, 1/2 cup coconut flakes, 1/2 cup mixed nuts (roughly chopped), 3 tablespoons honey, and 2 tablespoons coconut oil. Spread on a baking tray and bake at 160°C for 25 minutes, stirring halfway. Let cool completely for maximum crunch.

Serve with Greek yoghurt, sliced banana, and seasonal fresh fruit. Store leftover granola in an airtight container for up to two weeks.

2. Avocado Toast with a Poached Egg

Toast a thick slice of sourdough or whole grain bread. Mash a ripe avocado with a squeeze of lemon juice, salt, and red chilli flakes. Spread generously over the toast and top with a poached egg. Finish with cracked black pepper and a drizzle of olive oil.

The combination of creamy avocado, runny yolk, and crunchy toast is simple perfection.

3. French Toast

Whisk together 2 eggs, a splash of milk, 1 teaspoon vanilla extract, and 1/2 teaspoon cinnamon. Soak thick slices of brioche or challah bread for 30 seconds per side. Cook in butter over medium heat until golden on both sides.

Top with fresh berries, a light drizzle of maple syrup, and a dusting of icing sugar. For a savoury twist, skip the sugar and serve with bacon and a fried egg.

4. Tropical Smoothie Bowl

Blend 1 frozen banana, 1/2 cup frozen mango chunks, 1/4 cup coconut milk, and 1 tablespoon peanut butter until thick and creamy. The mixture should be scoopable, not drinkable — add liquid sparingly.

Pour into a bowl and top with granola, sliced kiwi, shredded coconut, and a drizzle of honey.

5. Mushrooms and Eggs on Toast

Slice 200g mixed mushrooms and sauté in butter with a minced garlic clove over high heat until golden. Season with salt, pepper, and fresh thyme. Serve on toasted sourdough with eggs cooked however you prefer — scrambled, fried, or poached — and a handful of rocket or spinach.

Simple, savoury, and packed with protein. Ready in under 15 minutes.
